Ingredients
  

  • 2 cups Rolled oats do not use instant oats
  • 1 Ripe banana or 1/2 cup applesauce
  • 1 Egg or flax egg for vegan
  • 1.25 cups Milk dairy or non-dairy
  • 1/4 cup Maple syrup or honey or agave
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1 pinch Salt
  • 1 tsp Vanilla extract optional
  • Add-ins berries, chocolate, nuts, etc.

Instructions
 

  • Preheat oven to 375°F. Grease a small baking dish.
  • In a large bowl, mash the banana. Add egg, milk, syrup, vanilla, cinnamon, salt, and baking powder. Whisk to combine.
  • Stir in oats. Fold in any add-ins like berries or chocolate chips.
  • Pour mixture into baking dish. Bake for 30 minutes or until set and golden on the edges.
  • Let cool slightly before slicing or scooping. Serve warm.

Notes

Stores in fridge for up to 5 days. Reheat with splash of milk. Can freeze in portions. Use rolled oats for best texture.
